Why We Use Dried Chickpeas
The difference between hummus made from dried chickpeas and hummus made from canned chickpeas is substantial. Dried chickpeas soaked overnight and cooked to order absorb less water, retain more starch on their surface, and produce a creamier, more cohesive paste when blended.
