Taza means fresh.
Taza (طازة) is the Arabic word for fresh. It's in our name and on our logo, and it's how the kitchen runs: pita and manaeesh off our own oven, falafel fried to order, and halal chicken and beef shawarma carved off the vertical spit.

The oven
Pita puffs up on the oven deck, and the manaeesh and hand pies bake on it too: za'atar, cheese, spinach, lahm bi ajin. See the manaeesh

Chicken and beef shawarma turn on the vertical spit and are carved for your pita, shrak wrap or bowl. See the bowls
The fryer
Falafel goes into the fryer when you order it, so it reaches you hot and crisp. See the falafel
