Fresh Dough, Every Morning
Our dough is mixed from scratch every single morning using flour, water, yeast, a pinch of salt, and olive oil. No preservatives, no dough conditioners, no frozen balls thawed overnight. The dough rests and rises naturally at room temperature until it doubles in size and develops the right airy texture.
Hand-Stretched to Order
When you order, a ball of dough is pulled from the batch and stretched by hand on a floured surface. The goal is an even, round disc -- thin enough to crisp at the edges but thick enough in the center to support the toppings without tearing. This is not a rolling pin operation. The hands do the work.
Topped Generously
