There is no secret ingredient in great hummus. The secret is the process. Each step matters and skipping any of them produces a noticeably inferior result. Here is exactly how we make ours.

Overnight Soak

The night before, we measure out our dried chickpeas and submerge them in cold water with a pinch of baking soda. Over 12 hours, the chickpeas absorb water and nearly double in size. This long soak is what allows them to cook evenly and blend into a perfectly smooth paste.

Slow Cook Until Tender

In the morning, the soaked chickpeas go into the pot and cook at a gentle simmer. We do not rush this. The chickpeas need to be soft enough that they practically fall apart when pressed between two fingers. Undercooked chickpeas produce grainy hummus -- we never serve that.
