How We Make Our Falafel

Four steps, no shortcuts. This is what separates real falafel from the stuff that comes out of a bag.

Soaking the Chickpeas

18 hours

Every batch starts the night before. We measure dried chickpeas -- never canned -- and submerge them in cold water. Over 18 hours, the chickpeas absorb water and nearly double in size. This slow hydration is critical. Canned chickpeas are already cooked, which makes falafel mushy and heavy. Raw soaked chickpeas hold their structure in the fryer and produce a lighter, creamier interior.

Grinding the Mixture

Small batches

The soaked chickpeas go into a commercial grinder along with fresh flat-leaf parsley, cilantro, white onion, garlic, cumin, coriander, salt, black pepper, and a pinch of cayenne. We grind in small batches so the mixture stays coarse -- you should be able to see flecks of green herb and chickpea throughout. Over-processing kills the texture. We add a small amount of baking soda right before shaping, which creates those tiny air pockets that make the inside fluffy.

Hand-Shaping Each Piece

We portion and press each falafel by hand using a traditional brass mold. No machine stamping, no conveyor belt. This gives every piece a slightly rough, irregular surface -- which is exactly what you want. Those ridges and edges become extra-crispy contact points in the fryer. The center stays soft because the hand-shaped ball is not compressed as tightly as a machine would do it.

Frying to Golden Perfection

3-4 minutes at 350 degrees F

The shaped falafel drops into clean, hot oil at 350 degrees. It fries for three to four minutes until the outside is deep golden brown and audibly crunchy. We pull each batch at the exact moment the exterior sets and the interior reaches the right density -- firm enough to hold together, soft enough to fall apart on your tongue. It goes straight from the fryer to your pita, wrap, or bowl. No heat lamp. No waiting around.
