Understanding Falafel

What Is a Falafel Wrap and What Makes Shrak Bread Special?

A falafel wrap is ground chickpeas (or fava beans in Egypt) shaped into balls or patties, deep-fried until golden, and rolled inside flatbread with fresh vegetables and sauce. The concept is centuries old. Falafel originated as a Coptic Christian street food in Alexandria, Egypt, where fried fava bean patties called ta'amiya served as a protein source during religious fasts. As the recipe traveled north into Palestine, Lebanon, Syria, and Jordan, cooks swapped fava beans for chickpeas and added generous amounts of fresh herbs -- parsley, cilantro, and dill -- creating the bright green interior that marks authentic Levantine falafel.

The bread used for falafel wraps varies by region. In urban Beirut and Amman, falafel goes inside thick pita pockets. But in rural Jordan, Palestine, and across Bedouin communities, the preferred bread is shrak: a paper-thin flatbread baked on a convex metal dome called a saj. The dough is stretched by hand until nearly translucent, then draped over the hot dome where it cooks in seconds. The result is soft, pliable, and delicate -- nothing like the thick, doughy wraps you find at chain restaurants.

At Taza, we make both. Our falafel pita (from $8.95) uses house-baked pocket bread -- thick enough to hold the falafel and toppings without falling apart. Our falafel shrak wrap (from $9.95) uses the traditional dome-baked flatbread that lets the falafel and tahini take center stage. And for those who skip bread entirely, the falafel bowl (from $10.45) serves the same fresh-fried falafel over rice, greens, or hummus. All three formats use the same chickpea falafel recipe and the same 14-topping bar.

Shrak bread deserves its own explanation because most Americans have never encountered it. The word "shrak" (also spelled "shrek" or "markook" in some dialects) refers to the thinness of the dough. The saj dome is heated over an open flame, and the bread cooks so quickly that it stays soft and pliable instead of becoming crispy. When wrapped around falafel, shrak forms a tight, thin layer that adds a subtle wheaty flavor without masking the filling. It is the closest thing to a crepe in Middle Eastern cooking, but with more structure. Bedouin families have baked shrak this way for generations because it travels well, stores easily, and wraps around any filling.

The Taza Difference

What Makes Our Falafel Wraps Different

Most falafel in Northern Virginia comes from frozen mixes or pre-formed patties warmed under heat lamps. Here is what we do differently at Taza.

Chickpeas Ground In-House

Our falafel starts with dried chickpeas -- never canned. We soak them overnight, then grind them fresh with parsley, cilantro, onion, garlic, cumin, and coriander. The texture is coarse, not pasty. That coarse grind is what creates the crispy exterior and the herb-flecked green interior that separates real falafel from the reconstituted kind.

Fried to Order, Never Pre-Made

Every falafel at Taza is dropped into the fryer after you order. Not before. Not in bulk at 10 AM for the lunch rush. The difference is immediate: a shattering golden crust on the outside, a moist herb-green center on the inside. Falafel that has been sitting under a heat lamp for an hour is a completely different product. We do not serve that.

Shrak Bread Baked on a Dome

Our shrak bread is baked on a traditional domed griddle called a saj. The result is a paper-thin, pliable flatbread that wraps tightly around the falafel without tearing. It is softer and more delicate than a standard flour tortilla and has a subtle, wheaty flavor. Shrak is the bread that Bedouin families have used for centuries across the Levant.

14 Toppings, All Included

Every falafel wrap comes with access to our full self-serve toppings bar. Lettuce, tomatoes, cucumbers, onions, mint, parsley, pickles, black olives, pickled turnips, tahini, garlic mayo, olive oil dressing, hummus, and baba ghanoush. Add as many as you want. No extra charge. No limit.

100% Halal Kitchen

Every ingredient in our kitchen meets halal standards. Oils, sauces, bread, proteins -- everything. For families who require halal compliance, there is no guesswork. Our falafel is also naturally vegan, so it satisfies multiple dietary requirements simultaneously.

Sauces Made From Scratch

The tahini is ground from roasted sesame seeds and blended with lemon juice and garlic. The hummus is made from dried chickpeas cooked until silky. The garlic sauce is whipped in-house daily. None of our sauces come from squeeze bottles or food service distributors. You can taste the difference in every bite of your wrap.

From Chickpea to Wrap

How We Make Falafel at Taza

Five steps. No shortcuts. Every falafel that goes into your wrap started as a raw, dried chickpea that morning.

01

Soak the Chickpeas

We start with dried chickpeas, never canned. They soak in cold water for a minimum of 12 hours. During this time, the chickpeas absorb water and double in size. The long soak is essential -- it hydrates the chickpeas enough to grind into a batter without cooking them first. Cooking before grinding would make the falafel mushy instead of crispy. This is where most restaurants cut corners. Canned chickpeas are already cooked and produce a dense, gummy falafel that falls apart in the fryer.

02

Grind with Fresh Herbs

The soaked chickpeas go into a grinder with fresh flat-leaf parsley, cilantro, white onion, raw garlic, ground cumin, ground coriander, and a pinch of baking powder for lift. We grind to a coarse, crumbly texture -- not a smooth paste. The coarse grind is what creates pockets of air inside the falafel that turn into crispy channels when fried. If you grind too fine, you get a dense hockey puck. The herb ratio matters too: we use a generous amount of parsley and cilantro, which is why the center of our falafel is bright green, not beige.

03

Shape by Hand

Each falafel is shaped using a traditional falafel mold that presses the mixture into uniform rounds. The mold also creates small ridges on the surface that increase the area exposed to hot oil, which means more crunch per piece. We portion every falafel to the same weight so they cook evenly. No machine-formed patties, no pre-frozen pucks from a distributor. Shaping by hand is slower, but it produces a falafel with better texture and a more honest appearance.

04

Fry to Order

When you place your order, your falafel goes into the fryer. Clean oil, maintained at the right temperature throughout service. The falafel fries for several minutes until the outside is deeply golden and the inside is cooked through but still moist. Timing matters -- underfrying leaves the center raw, overfrying dries it out. We pull each batch at the exact right moment. Your falafel goes from fryer to wrap in under a minute.

05

Assemble the Wrap

Hot falafel straight from the fryer is placed onto warm shrak bread (or tucked into a fresh pita pocket). Tahini gets drizzled over the top. Then you build: lettuce, tomatoes, cucumbers, pickles, whatever you want from our 14-topping bar. The wrap is rolled tight, cut in half, and served immediately. The heat from the falafel warms the bread and slightly melts the tahini. That first bite -- crispy falafel, cool vegetables, warm bread, rich tahini -- is the whole point.

Deep Dive

The Story Behind the Falafel Wrap

Falafel originated in Egypt, most likely in Alexandria, where Coptic Christians ate fried bean patties (called ta'amiya) as a protein-rich alternative to meat during Lent. The original version used fava beans, not chickpeas. As the dish traveled north through the Levant -- into Palestine, Lebanon, Syria, and Jordan -- cooks adapted it. Chickpeas replaced fava beans. The spice profile shifted to cumin and coriander. Fresh herbs became a core ingredient rather than an optional addition.

The idea of wrapping falafel in bread is as old as falafel itself. Street vendors in Cairo, Beirut, Amman, and Damascus served falafel in flatbread long before the modern restaurant industry existed. The bread was whatever was local: Egyptian baladi bread in Cairo, pita in Beirut, shrak in the Jordanian countryside. The concept was simple -- portable, filling, and affordable. You could eat it while walking to work. The falafel wrap was working-class food, sold from carts and small storefronts for a few coins.

Shrak bread -- the thin, dome-baked flatbread we use at Taza -- comes from the Bedouin tradition. Nomadic families baked it on an inverted metal dome (called a saj) placed over an open fire. The dough was stretched thin by hand and draped over the dome, where it cooked in seconds. The result was a paper-thin, pliable bread that could wrap around anything. When Bedouin families encountered falafel, the combination was natural: crispy fried chickpea fritters inside soft, thin bread with tahini and whatever fresh vegetables were available.

Pita bread -- the pocket bread -- became the dominant falafel vessel in urban centers. Its thick, pillowy construction created a pocket that could be stuffed full. Street vendors in Beirut and Amman developed the classic falafel pita: three or four falafel balls pressed into a half-pita, topped with tahini, pickled turnips, tomato, and parsley. This format became the standard across the Middle East and the version most familiar to Western diners.

In the United States, falafel wraps arrived with waves of Middle Eastern and North African immigration starting in the mid-20th century. New York City food carts popularized the falafel pita in the 1970s and 1980s. By the 2000s, falafel had entered mainstream American dining. But the quality varied enormously. Many fast-food versions used pre-made mixes and frozen patties. Shrak bread was nearly impossible to find outside of specialty bakeries and a handful of authentic Levantine restaurants.

At Taza, we serve both traditions. The falafel shrak wrap (from $9.95) uses the Bedouin-style thin bread. The falafel pita (from $8.95) uses the urban Levantine pocket bread. The falafel bowl (from $10.45) skips the bread entirely for those watching carbohydrate intake. All three use the same chickpea falafel recipe, the same fresh-fried preparation, and the same access to our 14-topping bar. The choice is yours.

The growing demand for plant-based food has given falafel a second wave of attention. Falafel is naturally vegan. It delivers significant protein from chickpeas. It is deeply flavorful without relying on animal products. For the increasing number of people who eat vegetarian or vegan several days per week, a falafel wrap from Taza is a satisfying meal that does not feel like a compromise. It is real food with centuries of history behind every bite.
